Philharmonic Peach Salsa

Tuesday, August 01, 2017

Juicy ripe peaches, herbs, a bit of jalapeño, and a ripe avocado creates a sweet and spicy salsa perfect for summer, particularly when used as a condiment for grilled chicken or fish.

Our Colorado Western Slope peaches, with their silky soft skin and sweet flesh, are sensational, and they give Georgia peaches a run for their money.

The Colorado Springs Philharmonic Guild supports our symphony orchestra by selling fresh-picked boxes of Western Slope peaches every summer. We never miss this sale, since we adore these nutrient-dense peaches, and our purchase helps support the coming-season access to the wonderful classical music that we all love.

2 cups of fresh peaches, diced

1/4 cup minced red onion

2 teaspoons minced jalapeño, or to taste

1/3 cup chopped cilantro, or to taste

1 diced ripe avocado

juice of one or two limes, or more to taste

salt to taste

Place all of the ingredients in a bowl and stir to combine. Cover and refrigerate for at least 30 minutes, or up to one day.

Nutritional information

Peaches truly are nutritional powerhouses.

They include 10 vitamins including A, C, E, K, and the B vitamins, thiamin, riboflavin, vitamin B-6, niacin, folate, and pantothenic acid. They also include the minerals potassium, magnesium, phosphorus, zinc, copper, manganese, iron, and calcium.

Peach skins are fiber rich and include a significant antioxidant called chlorogenic acid that promotes health by scavenging free radicals to reduce the effects of aging and chronic inflammation.

No one can go nutritionally wrong eating organic, if possible, fresh summer peaches
