Squash and Sage Risotto.

The official first day of fall and cooler weather calls for luscious autumn risotto. ​Today's recipe also includes roast acron winter squash and crispy sage leaves topped with a generous amount of thinly sliced pecorino-romano. 


4 tbsp extra virgin olive oil

2 tbsp butter, unsalted

1 large acorn squash, cleaned and cut into quarters with skin on

2 large minced shallots

2 large minced garlic cloves

2 cups Arborio rice

4 to 6 cups vegetable stock

2 tbsp half and half

1/2 cup plus 2 tbsp pecorino-romano, grated

1/2 cup sage leaves

​salt and pepper to taste


Preheat oven to 425 degrees. Put acorn squash quarters on baking sheet and drizzle lightly with olive oil.

In a large pot on medium-high heat, saute shallots and garlic cloves in 2 tbsp olive oil and 1 tbsp butter for three minutes.

Toss in Arborio rice and coat the rice with the olive oil and butter.

Pour in two cups of vegetable stock and stir regularly until the rice thickens.

Add in the remaining stock, one cup at a time, until the rice is al dente.  You may not need all six cups of stock.

Stir in half and half, grated pecorino-romano cheese, salt and pepper, and lower heat. Continue stirring regularly.

In a small saute pan over medium-high heat, crisp the sage leaves in 1 tbsp butter. They should only take about 45 seconds on each side. Remove from heat, and let them drain on a paper towel.

Pour risotto into a deep serving dish. Cut the acron squash off the peel, cut into half-inch cubes, and place on top of the risotto. 

Garnish with the crispy sage leaves and thin strips of pecorino-romano.

Nutritional information

Sage includes a variety of antioxidant enzyme flavonoids and the phenolic acid, rosmarinic acid, which reduces inflammatory responses by altering the concentrations of inflammatory messaging molecules.

Acorn squash includes beta carotene, niacin, folate, thiamine, B6, and C. Minerals include generous amounts of both potassium and magnesium. It also includes dietary fiber. 

Arborio rice includes healthy carbohydrates and about nine grams of protein per serving. It's also packed with vitamin C
